Copycat Italian Bread

A soft, golden loaf that's just like your favorite store-bought Italian bread-only better, because it's homemade.

Ingredients
  

  • 4 cups unbleached all-purpose flour
  • 1/4 cup potato flakes
  • 1/4 cup dry milk powder
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 2 teaspoons yeast
  • 3 Tablespoons olive oil
  • 1 1/3 cup Water. lukewarm
Topping
  • 1 egg white, beaten
  • sesame seeds

Method
 

  1. In the bowl of a stand mixer add water , sugar, and yeast. Let proof until bubbly about 10-15 minutes.
  2. After the yeast is bubbly add remaining ingredients ( except topping ingredients), mix until combined and then knead for 8-10 minutes or until it's smooth and supple and its stretchy and passes the windowpane test.
  3. Cover the dough and let it rise for 1-2 hours or as long as it's doubled in size.
  4. Transfer the dough to a floured surface and divide into 2 pieces. shape each piece into a loaf shape. Place the dough into a greased Italian bread pan or if you don't have a bread pan just place your dough on a parchment lined baking sheet, leaving enough room for them to rise and expand. Let the dough rise for at least 1 hour or until doubled in size.
  5. Brush the dough with egg wash and sprinkle with sesame seeds if using. Slash the loaves on a diagonal, making 3-4 slashes in each loaf. Bake in a pre-heated 400 degree oven for 25 minutes or until golden brown
  6. When done place loaves on a cooling rack to cool before cutting. Enjoy!
