In the bowl of a stand mixer add water , sugar, and yeast. Let proof until bubbly about 10-15 minutes.
After the yeast is bubbly add remaining ingredients ( except topping ingredients), mix until combined and then knead for 8-10 minutes or until it's smooth and supple and its stretchy and passes the windowpane test.
Cover the dough and let it rise for 1-2 hours or as long as it's doubled in size.
Transfer the dough to a floured surface and divide into 2 pieces. shape each piece into a loaf shape. Place the dough into a greased Italian bread pan or if you don't have a bread pan just place your dough on a parchment lined baking sheet, leaving enough room for them to rise and expand. Let the dough rise for at least 1 hour or until doubled in size.
Brush the dough with egg wash and sprinkle with sesame seeds if using. Slash the loaves on a diagonal, making 3-4 slashes in each loaf. Bake in a pre-heated 400 degree oven for 25 minutes or until golden brown
When done place loaves on a cooling rack to cool before cutting. Enjoy!
