Method
- Place the diced onion in the bottom of the crock pot. Arrange chicken breasts on top, drizzle with olive oil and spices listed above. or any other chicken seasoning you like.
- Cover and cook until the chicken is tender and reached 165℉Cook on low for approximately 5-6 hours, or on high for 3-4 hours.
- Transfer cooked chicken to cutting board and shred or cut chicken into bite sized pieces.
- Pour the chicken broth and softened onions from the crock pot into a measuring cup. Add additional chicken broth to make 2 cups total liquid. Set aside.
- Bring a large pot of salted water to a boil. Cook the egg noodles until tender. Drain.
- While noodles cook, melt butter in pot over medium heat, sprinkle in flour and whisk until smooth. Slowly pour in broth whisking continuously to prevent lumps.
- Reduce heat to low and add the heavy cream and bring to a boil.
- Taste the gravy and any extra seasoning if needed.
- Add the shredded chicken and noodles to the gravy. Fold everything together gently until the chicken and noodles are completely coated.
- If the gravy is thicker than you like, add extra broth or heavy cream.

- For a little color, you can add frozen peas during the final few moments before serving.
