Creamy Crock-Pot Chicken Noodles

This comforting chicken-and-noodles recipe uses the crock pot or the time-consuming part, then finishes with packaged egg noodles and a quick homemade cream gravy. It's easy enough for a busy day but tastes much better than a basic dump-and-go meal.

Ingredients
  

For the chicken
  • 2-21/2 pounds chicken breasts
  • 1 small onion
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp poultry seasoning
  • salt & pepper, to taste
For the noodles and creamy gravy
  • 12 ounces wide egg noodles
  • 4 T butter
  • 1/4 cup flour
  • Reserved cooking liquid from the crock-pot
  • Additional chicken broth as needed, for 2 cups total liquid
  • 1 cup heavy cream
  • salt and pepper, to taste
  • Additional poultry seasoning, if needed

Method
 

  1. Place the diced onion in the bottom of the crock pot. Arrange chicken breasts on top, drizzle with olive oil and spices listed above. or any other chicken seasoning you like.
  2. Cover and cook until the chicken is tender and reached 165℉
    Cook on low for approximately 5-6 hours, or on high for 3-4 hours.
  3. Transfer cooked chicken to cutting board and shred or cut chicken into bite sized pieces.
  4. Pour the chicken broth and softened onions from the crock pot into a measuring cup. Add additional chicken broth to make 2 cups total liquid. Set aside.
  5. Bring a large pot of salted water to a boil. Cook the egg noodles until tender. Drain.
  6. While noodles cook, melt butter in pot over medium heat, sprinkle in flour and whisk until smooth. Slowly pour in broth whisking continuously to prevent lumps.
  7. Reduce heat to low and add the heavy cream and bring to a boil.
  8. Taste the gravy and any extra seasoning if needed.
  9. Add the shredded chicken and noodles to the gravy. Fold everything together gently until the chicken and noodles are completely coated.
  10. If the gravy is thicker than you like, add extra broth or heavy cream.

Optional additions
  • For a little color, you can add frozen peas during the final few moments before serving.
