The Best Creamy Summer Macaroni Salad

Ingredients
  

  • 2 cups dry rotini or elbow macaroni
  • 4-5 hard boiled eggs, chopped
  • 1 celery stalk, diced small
  • 1 small onion, diced small
  • 1 small red pepper, diced small
  • 1/3 cup sweet pickle relish
For the Dressing
  • 3/4 cup real mayonnaise
  • 1 Tbsp yellow mustard
  • 1-2 Tbsp sweet pickle juice
  • 1 Tbsp sugar
  • salt and pepper, to taste
  • 1/4 tsp onion powder
  • sprinkle of paprika

Method
 

  1. Cook the pasta
    cook pasta slightly past al dente. drain well
  2. Season the warm pasta
    While pasta is still warm add sweet pickle juice and a sprinkle of salt
  3. Allow pasta to cool slightly.
  4. Make the dressing
    Mix together:
    mayo, mustard, sugar, and seasonings
  5. Combine
    Add eggs, celery onion, red pepper, relish to pasta
    Pour dressing over all and stir until evenly coated.
  6. Chill
    Refrigerate at least 2-4 hours
    Before serving, stir in another spoonful or two of mayo if needed before serving.
Notes
  1. Dice onions small so they don't overpower salad, this salad can be made ahead an tastes even better the next day, if it thickens in fridge too much add a little extra mayo before serving.
