Scrambled eggs are one of the simplest things to cook, but they are also one of the easiest foods to overcook.
Many people rush them – cracking eggs into a hot pan and stirring them constantly until they turn dry and crumbly. Good scrambled eggs should be soft, creamy, and gently set.
The difference isn’t fancy ingredients or complicated techniques. It simply comes down to whisking the eggs well, cooking them gently, and removing them from the heat before they dry out.
Handled with a little care, scrambled eggs become smooth, tender, and far more enjoyable than the overcooked versions many of us grew up with.

Why Scrambled Eggs Turn Dry
Eggs cook very quickly, so they can go from perfectly soft to overdone in a matter of seconds.
High heat and constant stirring tend to break the eggs into small, dry pieces. Cooking them a little more gently allows the eggs to form soft curds that stay creamy instead of crumbly.
The key is simple: don’t beat them up in the pan and don’t overcook them.

- Crack the eggs into a bowl and whisk until the yolks and whites are fully combined.
- .Season lightly with salt and pepper.
- Heat a small skillet over medium-low to medium high heat and melt butter.
- Pour the eggs into the pan and allow them to sit briefly as they begin to set.
- Using a spatula, gently move the eggs so the uncooked egg flows underneath.
- Cook slowly and do not beat the eggs around the pan.
- When the eggs are softly set and still slightly glossy, remove from the heat.
- Note: Remove the eggs just before they look completely done. They will finish cooking from the remaining heat in the pan.

Eggs in pan..don’t do anything yet! Be patient….let the eggs begin to set.
Make sure the heat is not set too high. You want a medium heat here.

Eggs beginning to set. Gently fold them over with a spatula so the uncooked egg can fall to the bottom.

This is the finished product. They are creamy and delicious.
